This discoloration is caused by a reaction between the iron in the egg yolk and sulfur compounds in the egg white. When eggs are exposed to high temperatures or are cooked for too long, these elements interact and form iron sulfide, which creates the green ring around the yolk.
Although the egg is still safe to eat, the appearance and sometimes the texture or mild flavor can be affected. To reduce the chance of this happening, it is important to manage both cooking temperature and timing carefully during preparation.
A reliable method is to place eggs in a single layer in a pot and cover them with cold water, ensuring the water level is about one to two inches above the eggs. Heat them gradually over medium heat until the water reaches a gentle boil. Once boiling starts, remove the pot from heat, cover it, and allow the eggs to sit in the hot water for about 9 to 12 minutes, depending on how firm you prefer the yolk. Immediately transferring the eggs to an ice-water bath after cooking helps stop the process quickly, improves peeling, and helps maintain a bright yolk color.
