The mix of subtle greens, purples, and blues can look metallic and raise questions about freshness. While the appearance can be surprising, color alone does not determine whether the meat is safe. In most cases, the rainbow sheen is harmless. It occurs when light reflects off tightly packed muscle fibers in thinly sliced meat, causing light waves to separate and create an iridescent look. Moisture on the surface and curing ingredients commonly used in deli meats can make the effect more noticeable. This reaction is similar to the way light reflects on soap bubbles or a thin layer of oil and does not indicate contamination.
