What You Should Never Cook in a Cast Iron Skillet (and Why)

Cast iron skillets are valued for their durability, versatility, and ability to last for generations with proper care. They work well for everything from crisping

bacon and baking cornbread to searing steaks. However, certain foods and cooking habits can damage the seasoning, affect flavors, or encourage rust.

Acidic ingredients such as tomatoes, vinegar, and citrus can gradually weaken the seasoning and interact with the metal. A small amount used briefly may be

fine in a well-seasoned skillet, but long-simmered acidic sauces are generally better prepared in stainless steel or enameled cookware.

Delicate foods can also be challenging. Fish may stick and break apart, while sticky, sugar-rich sauces can burn and become difficult to remove.

Eggs may also stick when the seasoning isn’t completely smooth. Strongly flavored foods, including garlic-heavy dishes,

spicy curries, and smoky recipes, can leave lingering flavors that may affect lighter meals or desserts prepared afterward.

Excess moisture can create additional problems. Boiling, steaming, soaking, or leaving food in the skillet for extended periods can weaken the seasoning and encourage rust.

Sudden temperature changes should also be avoided because they can potentially cause the pan to warp or crack.

With proper care, cast iron can remain a dependable kitchen tool for many years. Dry the skillet thoroughly after washing, apply a light layer of oil, avoid unnecessary soaking, and choose cookware

according to the food you’re preparing. Treating your skillet carefully will help preserve its surface and keep it performing well for years to come.
